Spring pruning in the Červar olive groves: The Secret to healthy trees and Premium Oil

As nature awakens from its winter slumber, our olive groves enter their most important phase – pruning. Early spring is the ideal time for this task, and at Červar, we carefully tend to each tree every year to ensure a bountiful harvest and high-quality fruit. This year, for the first time, we are introducing the polyconic vase pruning method – a technique that’s gaining increasing recognition in the world of olive cultivation.

What is a Polyconic vase?

The polyconic vase is a modern method of shaping the olive tree canopy to allow for optimal airflow, better light exposure, and easier harvesting and mechanization. In practice, this means trimming each tree to several main branches that spread out in the form of multiple cones. This encourages even growth, reduces shading within the canopy, and improves the overall health of the tree.

Unlike traditional pruning systems, the polyconic vase pruning method provides the tree with both space and structure, allowing it to consistently yield higher-quality, more uniform fruit – a key factor in producing top-grade Červar extra virgin olive oil.

Hand Pruning – A Labor of Love for Every Tree

Our olive growers, Deni and Franko, rolled up their sleeves early on a spring morning, prepped their pruning shears, and got to work. We treat each tree with special care, knowing that this level of attention throughout the year brings results in the form of healthy, flavorful green olives.

With the sun finally granting us a few warm days, the olive tree fields come alive. Smiles on faces, the gentle sound of tools, and the scent of soil remind us how important it is to stay connected with nature – and how every bottle of our oil carries a story of dedication, knowledge, and love.

Quality is Cultivated Year-Round

While the harvest brings the most excitement, everything begins with a healthy, properly shaped tree. Pruning is the first step toward another exceptional harvest and a new batch of our Červar extra virgin olive oil, which is made exclusively through cold pressing and the careful selection of the best olives.

The next time you open a bottle of our oil and taste its freshness and richness, know that it all began right here – in early spring, under canopies shaped into polyconic vases, in groves we nurture as part of our family.
